As a keen industry watcher, Aangad Singh from our Business Development team, has seen some great innovations that businesses across the food industry are introducing to reduce carbon emissions, tackle waste and improve their overall sustainability credentials. As well as focusing on great ideas, he looks at the role that efficient food delivery management can play in enabling hospitality venues and restaurants to reduce their carbon footprints.
Whether it’s about fulfilling corporate social responsibility obligations due to existing regulations/legislation or engaging in good PR and customer engagement, VROMO has identified some great examples of restaurants who are implementing carbon neutral activities in order to reduce their contributions to climate change.
A great example of who is paving the way for carbon emission reductions is Burger King. They have already taken a stand against greenhouse gases (GHGs) with its “reduced methane Whopper”, which the company claims to be 33% less harmful than a regular Whopper. The cows are made to feed on lemongrass, which reduces emissions and lowers the company’s carbon footprint. Genius idea, right?
Whether they are headline-grabbing initiatives or small steps, they all contribute to the bigger picture. Here’s a selection of ways that restaurants can operate, procure and deliver in reducing their contribution to climate change:
· Use renewable materials such as edible cutlery, paper straws and recyclable plastic
· Install a compostable waste management system
· Practice water conservation
· Automate their inventory management to avoid wastage
· Introduce meat-free alternatives or meat-free days
· Procure locally to reduce transportation distances/emissions and improve quality
· Offset carbon by planting trees
· Switch to more-efficient (electric) vehicles
· Reduce carbon emissions by automating delivery

1. Manual Rate vs. Auto Dispatch
Delivery automation software removes the need to manually manage each delivery. This saves time and fuel costs and can reduce carbon emissions as auto dispatch works on a custom set of rules that will assign the delivery job to the most appropriate driver. For instance, the driver who is closest to the store would be ideal for the next delivery – this would save fuel and reduce carbon emissions, as excessive miles aren’t covered by a driver who is far away. 2. Doughnut Delivery
Most of us love a tasty, glazed ring of sweetness with a few sprinkles of joy on top. However, that’s not what we mean by ‘doughnut delivery’. At VROMO, we found that a 2.14-mile doughnut diameter is the ideal delivery distance. Our research found that it is in fact more cost-effective for restaurants with their own delivery fleets to operate within the 2.14-mile range and cover further distances using delivery service providers (DSPs) if need be. By setting a delivery diameter, VROMO can limit the miles covered by drivers and limit carbon emissions.
3. Route Optimisation
One of the most efficient ways to reduce the time and distance travelled by a delivery driver is by using the best route to complete a job. Delivery automation plans the optimum delivery route for the driver/rider, which can help avoid areas with heavy traffic and long routes. This saves fuel and reduces emissions.
4. Analytics and Stats
Keeping track of the delivery system and its performance is imperative for any business. Analytics provide restaurants with data such as ‘distance travelled’ and ‘off-job distance’, which can help restaurants calculate their carbon footprints and plan ways to offset carbon.
4½. You are what you Ride or Drive
According to a study carried out by the University of Oxford, riding a bicycle over driving a car just once a day reduces an average citizen’s carbon emissions by 67% in the transportation sector. Restaurants can greatly reduce emissions by adopting a sustainable transport system. Looking ahead, the age of electric vehicles is upon us. An electric fleet of delivery vehicles would cut emissions by a significant amount. Just for perspective, according to a 2019 study, the Nissan Leaf’s lifetime emissions were three times lower than those of a conventional diesel vehicle.
